In charge of the kitchens at L’Ambrosia since the beginning of this High Season 2014, Daniele Iannaci, a young chef aged 34 from Milan, has successfully set about reworking the menu at the Resort’s intimate, high-end restaurant.

After La Trattoria del Falco, a restaurant which he ran with his partner on the Italian Riviera and which made his name, Daniele stepped into the big league and consolidated his experience in France, at the prestigious Chalet du Mont Vallon 4* at Les Ménuires ski resort.

Very attached to his roots, he advocates quality ingredients rather than overly elaborate preparations which can sometimes be overwhelming. “In fact, my aim is to offer modern, simple, genuine Italian cuisine.” Thus, to the delight of our taste buds and for the good of our health, he chooses fresh produce from our islands and natural ingredients of superior quality. The results include a risotto of local prawns with Tahaa vanilla butter, as well as Mahi-Mahi sautéed with cocoa butter and served with peach puree…

Daniele, a major asset in the field of gourmet cuisine, invites you to discover L’Ambrosia, open every night except on theme dinner nights held on Mondays and Fridays.
